Carbonic maceration is a method of winemaking that results in bright, vibrant aromas with wonderfully crunchy textures on the palate. The 2022 Carbonic Zinfandel opens with ultra-fresh aromas of crushed wildberries, violets and mace. A juicy, lively mouthfeel delivers flavors of raspberry jam, black cherry and mulberry with notes of coffee and light peppercorn spices. Persistent fruit purity expands into a lusciously soft finish.
The grapes were hand-harvested under the cover of darkness at the Tooth & Nail estate in the Willow Creek District, in the westside coastal area of Paso Robles. The freshly harvested whole clusters were placed into a small stainless steel tank and layered with dry ice—starving the fruit of oxygen and prompting enzymatic “carbonic” maceration to take place within the actual grape berries, locking in ultra-fresh fruit aromas and flavors.
After 15 days, the must was gently pressed and all of the juice was racked neutral French oak barrels for the completion of primary fermentation. At the five month mark, 80 percent of the wine was racked to stainless steel for an additional four months of maturation before final blending. The wine was bottled unfined and unfiltered.
