The 2021 Blanc de Blancs enchants the senses with a dazzling platinum hue and delicate aromas of pear, honeycomb, and brioche. Ethereal and semi-creamy textures display notes of golden apple and lemon-lime with hints of minerality. Flashy acidity accentuates a dry, vivacious finish. The 2021 Blanc de Blancs originates from an early pick of Chardonnay fruit from a small vineyard at the southern end of the Santa Lucia Highlands AVA near the Arroyo Seco riverbed, where the vines sit along an east-facing hillside composed of clay and silt. This is a classic orientation and soil profile for the AVA, which is cradled into ancient alluvial fans that are shielded from the late afternoon sun by the towering Santa Lucia Mountains.
The southerly portion of the AVA is accentuated by warmer conditions while still benefiting from reliable Monterey Bay breezes, resulting in fruit that combines cool-climate finesse and vibrancy with richer fruit tones.
The fruit was harvested on September 1, 2021 after a steady and well-paced growing season. Upon arrival at the winery in the cool morning hours, the fruit was whole-cluster pressed and fermented exclusively in 228-liter neutral French oak barriques.
After fermentation, the wine underwent full secondary malolactic fermentation and was aged on the heavy lees in oak barriques for two months with regular stirring. It was then racked to stainless steel prior to being bottled and matured en tirage for 13 months per the classic Méthode Champenoise. The bottles were riddled by hand for 12 days prior to disgorgement, then corked with a dosage of 4.6g/L.
